Fish Cakes

Prep time- 5 minutes cooking time- 15 minutes

210 gram tin of pink salmon

½ an onion finely chopped

½ teaspoon tapioca flour

1 free-range large egg

Mix all ingredients together and roll into small balls, flatten the balls into patties using the palm of your hand. Put a good quantity of olive oil in the frying pan and when hot fry the patties until golden.

Makes 6. Serve immediately or store in the fridge for 4 days. Re heat before serving.
